For the better part of a generation, U.S. food manufacturers flooded the market with snacks heavy in carbohydrates – infinite varieties of granola bars, chips and crackers for time-crunched consumers to eat on the go. Those days are over. Over the past four years, products packed with carbs and gluten have fallen out of favor, and protein-rich foods such as cheeses, meats and nuts are making up a growing proportion of American grocery bills by the day.
